Cassia cinnamon is a kind of cinnamon, derived from the inner bark of an evergreen tree, which is predominantly found in south-eastern Asia. It is the most commonly available cinnamon in North America. It consists of hydroxychalcone and many other similar chemicals that can enhance insulin sensitivity. It is also packed with cinnamaldehyde, which can fight against fungi and bacteria. Cassia cinnamon is even used for flavouring a number of food and drinks.
